Want to feel like you’re eating Springtime? Try this Tabbouleh!

Welcome to my current recipe obsession - grain free tabbouleh.

Wonder what tabbouleh is?

Tabbouleh is a traditional Middle Eastern salad that typically features finely chopped parsley, tomatoes, mint, onion, and bulgur wheat, dressed with olive oil, lemon juice, salt, and pepper. It's known for its refreshing taste and vibrant colors, with parsley often being the dominant ingredient. Tabbouleh is a popular dish in many Mediterranean cuisines and is often served as a side dish or appetizer.

Why grain free?

Many of my patients need to avoid certain ingredients including gluten, dairy or grains- so this recipe gives you options. You can add quinoa for a gluten free grain option, wild rice or even bulgar wheat like the traditional recipe - if you’d like. Otherwise, try it grain free!

What are the benefits of tabbouleh?

This recipe is packed with vitamins A, C, E & K - making it perfect to supercharge your immune system with all of the crud going around. Parsley is known for its detoxifying qualities and the dish as a whole is loaded with fiber.

How should I serve it?

I love having a big container of tabbouleh in the fridge. For a quick meal I take a scoop of this salad, add in a serving of protein and any fun toppings like sunflower seeds, dried fruit and feta cheese (I use vegan feta crumbles from Follow Your Heart).

Enjoy!
